Easy Keto Meatloaf Recipe (with sausage and beef)

- 1 large egg
- ½ tsp sea salt
- ½ tsp black pepper
- 2 tsps garlic powder
- 2 tsps onion powder
- ½ tsp dried thyme
- 1 lb 85/15 lean ground beef
- 1 lb ground mild sausage
- ½ cup blanched finely ground almond flour
- ½ cup pork rinds finely crushed
- 2 Tbsp Sugar free ketchup I use Heinz
Preheat your oven to 350° F.
In a large bowl, whisk together the egg, salt, pepper, garlic powder, onion powder, and thyme.
Add the ground beef, almond flour, and pork rinds. Mix until blended.
Press mixture into bread pan.
Bake the meatloaf until the center of the loaf registers 160° F, 50-60 minutes.
Let stand for 15 minutes before slicing and serving.
- My favorite pork rinds to use are Epic BBQ pork rinds. They add a little zest!
- Make sure to crush the pork rinds extra or there will be chewy pieces in the meatloaf.
- Heinz has an excellent sugar free ketchup.
- For added spice use hot italian sausage.
