Leftover Ham Casserole - Keto Friendly

Great use of leftover ham - satisfies picky eaters!

Ingredients

  • 4 C cauliflower cut in bite size pieces
  • 2 Tbsp olive oil I love extra virgin!
  • 1/2 C onion diced
  • 2 C baby spinach or other greens
  • 2 C ham cooked and chunked
  • 2.5 C shredded cheddar or cheese of choice
  • 3/4 C sour cream
  • 1/2 C cream cheese softened
  • salt + pepper to taste

Instructions

  • Saute onion in olive oil
  • Wilt spinach in onion mixture
  • Add sour cream and cream cheese
  • Stir until all is combined
  • Mix in ham chunks and 2 cups of cheese
  • Place in casserole dish and top with remaining cheese
  • Heat in 350 degree oven approximately 35-40 minutes until bubbly
