Pork Chops smothered in Stewed Tomatoes and Capers

Ingredients

  • 1/2 Tbsp Olive Oile
  • 1/2 clove Minced Garlic
  • 1/2 Tbsp Relish
  • 1/4 can Diced Tomato
  • 1/2 Tbsp Capers drained
  • 2 Pork Chops
  • 1/4 Tbsp Rosemary
  • Salt optional
  • Black Pepper optional

Instructions

  • Pat pork chops dry, then sprinkle with salt and pepper
  • Heat half the oil in a skillet over medium high heat until it shimmers
  • Add pork chops to heated pan and cook for 5 minutes per side or until brown and no longer pink inside. Only turn once.
  • Transfer to a plate and cover with foil
  • Add remaing oil to skillet
  • Add minced garlic to skillet for 30 seconds
  • Add diced tomatioes, relish, and drained capers
  • Stir ingredients together
  • Allow it to simmer until tomatoes have slightly softened
  • Place pork chops back in the pan and simmer for another 2-3 minutes
  • Transfer to pork chops to a plate and cover in the tomato mixture
