Pork Chops smothered in Stewed Tomatoes and Capers

- 1/2 Tbsp Olive Oile
- 1/2 clove Minced Garlic
- 1/2 Tbsp Relish
- 1/4 can Diced Tomato
- 1/2 Tbsp Capers drained
- 2 Pork Chops
- 1/4 Tbsp Rosemary
- Salt optional
- Black Pepper optional
Pat pork chops dry, then sprinkle with salt and pepper
Heat half the oil in a skillet over medium high heat until it shimmers
Add pork chops to heated pan and cook for 5 minutes per side or until brown and no longer pink inside. Only turn once.
Transfer to a plate and cover with foil
Add remaing oil to skillet
Add minced garlic to skillet for 30 seconds
Add diced tomatioes, relish, and drained capers
Stir ingredients together
Allow it to simmer until tomatoes have slightly softened
Place pork chops back in the pan and simmer for another 2-3 minutes
Transfer to pork chops to a plate and cover in the tomato mixture
