Ingredients

  • ½ Cup Asparagus 67g
  • ¼ Tbsp Balsamic Vinegar 4g
  • ¼ tsp Dijon Mustard 1g
  • ½ Tbsp Olive Oil 7g
  • ½ Cup Iceberg Lettuce shredded, 18g
  • ¼ tsp Honey 2g
  • ½ Tbsp Shallot chopped, 5g
  • 1 Tbsp Slivered Almonds 10g
  • 1 Dash Black Pepper 0g

Instructions

  • Bring a pot of water to boil with a steam tray over top.
  • Steam asparagus for 5-10 minutes or until crispy-tender.
  • Drain and pat dry with paper towel. Cool, chop and set aside.
  • In a bowl, combine chopped shallot, vinegar, mustard, honey and black pepper. Gradually whisk oil.
  • Transfer shredded lettuce in a serving plate and top with chopped asparagus.
  • Drizzle dressing.
  • Garnish with shaved almonds.
