Keto Asparagus Salad with Slivered Almonds

- ½ Cup Asparagus 67g
- ¼ Tbsp Balsamic Vinegar 4g
- ¼ tsp Dijon Mustard 1g
- ½ Tbsp Olive Oil 7g
- ½ Cup Iceberg Lettuce shredded, 18g
- ¼ tsp Honey 2g
- ½ Tbsp Shallot chopped, 5g
- 1 Tbsp Slivered Almonds 10g
- 1 Dash Black Pepper 0g
Bring a pot of water to boil with a steam tray over top.
Steam asparagus for 5-10 minutes or until crispy-tender.
Drain and pat dry with paper towel. Cool, chop and set aside.
In a bowl, combine chopped shallot, vinegar, mustard, honey and black pepper. Gradually whisk oil.
Transfer shredded lettuce in a serving plate and top with chopped asparagus.
Drizzle dressing.
Garnish with shaved almonds.
