Instructions
Pre-heat oven to 350 °F.
Line baking pan with parchment paper and set aside.
Use a sharp knife to cut a pocket into the side of each chicken breast.
Stuff pocket with shredded cheese and chopped jalapeno.
Season outside of chicken breast with salt and pepper.
Wrap bacon around the stuffed chicken and place it on lined baking pan.
Bake in the oven for 40 minutes or until chicken is no longer pink inside and bacon is crispy.

Notes
We make a large batch of these and freeze them raw. Wrap in parchment paper and then aluminum foil before bagging in a Ziploc bag for maximum freshness. Thaw completely and cook like normal.
