Over medium heat, add all chopped onions to the pan
Saute for approximately 5 minutes or until vegetables are to the doneness you like
Add eggs in and use your spatula to break the yolks and mix. Traditionally you break eggs in a bowl and whisk but I like this quick way.
Cook on one side for 3-5 minutes until the edges are solid enough to put a spatula under
Flip the omelette over and cover with the mozzarella
Using the spatula under the egg to help, slide onto your plate and fold in half

I tend to use only the frying pan when flipping my omelet over. To do this takes practice but is so easy once you master it. Start to shimmy the omelet to the side away from the handle. Once it's partway up flick your wrist to flip it into the air and catch. You may want to practice over the sink the first few times!
