  • 1 Large Cauliflower broken into bite-size pieces
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Garlic minced
  • 2 Tbsp Butter
  • 8 Ounces Cream Cheese
  • 225 Grams Sharp Cheddar Grated
  • 100 Grams Sharp Cheddar Grated and reserved
  • 20 Grams Cooked Bacon Crumbled


  • Preheat oven to 350°
  • Add half an inch of water to the pot
  • Bring water to a boil
  • Cut cauliflower into bite-size pieces
  • Add cauliflower to pot, cover with a lid
  • Once the water boils again, turn off the heat and let cauliflower set for 5 minutes
  • Drain cauliflower well and add to an 8x8 casserole dish or its equivalent
  • Microwave the butter and cream cheese in a medium sized bowl for 30 seconds, just to soften slightly
  • Add cheddar cheese, minced garlic, sea salt, and pepper to the bowl and mix
  • Add the mixture to the cauliflower and mix well
  • Top the dish with remaining cheddar, bacon, and chives
  • Bake for 30 minutes
  • Let stand for 5 minutes and serve
