- 100 Grams Chicken Breast
- ½ Cup chopped Celery 50g
- ⅓ Cup Green Onion chopped, 33g
- ¼ Cup Mayonnaise 59g
- ½ tsp Dijon Mustard 3g
- 30 Grams leaf Butterhead Lettuce 2 big leaves
- 1 Tbsp Dill 1g
- 1 Dash Salt (optional)
- 1 Dash Black Pepper (optional)
Preheat oven to 400F and line a baking sheet with parchment paper.
Place chicken breast on prepared baking sheet and cook for 20 minutes or until chicken is no longer pink inside. Cool and chop into bite size pieces.
Line a serving bowl with a large lettuce leaf and set aside.
In a bowl, add diced celery, mayonnaise, mustard, chopped green onion and cooked chicken together.
Season with salt, pepper and dill.
Mix chicken mixture until well combined and then scoop into prepared bowl.
Optional to garnish with extra dill or carrot strings on top.
