Keto Chicken Salad Lettuce Wraps

Chicken seasoned with dill, dijon mustard, green onion and celery. Perfect for a snack or a meal.

Ingredients

  • 100 Grams Chicken Breast
  • ½ Cup chopped Celery 50g
  • Cup Green Onion chopped, 33g
  • ¼ Cup Mayonnaise 59g
  • ½ tsp Dijon Mustard 3g
  • 30 Grams leaf Butterhead Lettuce 2 big leaves
  • 1 Tbsp Dill 1g
  • 1 Dash Salt (optional)
  • 1 Dash Black Pepper (optional)

Instructions

  • Preheat oven to 400F and line a baking sheet with parchment paper.
  • Place chicken breast on prepared baking sheet and cook for 20 minutes or until chicken is no longer pink inside. Cool and chop into bite size pieces.
  • Line a serving bowl with a large lettuce leaf and set aside.
  • In a bowl, add diced celery, mayonnaise, mustard, chopped green onion and cooked chicken together.
  • Season with salt, pepper and dill.
  • Mix chicken mixture until well combined and then scoop into prepared bowl.
  • Optional to garnish with extra dill or carrot strings on top.
