Keto Swedish Meatballs Crockpot Recipe

Ingredients

Meatballs Ingredients:

  • 1 pound Ground Beef
  • 1 small Onion diced
  • 1 tsp minced Garlic
  • ¼ cup Almond Flour
  • 1 tsp Salt
  • ½ tsp Ground Black Pepper
  • ¼ tsp Allspice
  • 1 large Egg
  • 2 Tbsp Olive Oil

Cream Sauce Ingredients:

  • 1 Tbsp Salted Butter
  • 1 Cup Beef Stock
  • ½ Cup Heavy Cream
  • 1 tsp Mustard Powder
  • ½ tsp Salt
  • ¼ tsp Ground Black Pepper
  • ½ tsp Ground Nutmeg
  • 1/4 tsp Xanthan Gum
  • 1 Tbsp Parsley chopped

Instructions

  • Place all the meatballs ingredients, except the oil, into a mixing bowl. Mix well.
  • Roll into balls that are about 2 tablespoons worth of mixture. Make sure they are even in size. We got 16 meatballs
  • Place a large frying pan over medium heat and add the oil.
  • Saute the meatballs, turning until browned on all sides and cooked through. Move to a plate.
  • Keep the pan on the heat, including all the little bits left by the meatballs in the pan.
  • Add the butter, beef stock, cream, mustard powder, salt, pepper, and nutmeg and xantham gum. Whisk together.
  • Simmer about 2 minutes
  • Add the meatballs to crockpot on low heat
  • Cover in the swedish meatball sauce
  • If around, turn the meatballs over half way through cooking time if they are not totally submerged in the sauce
  • Cook on low for 3 hours
