Keto Swedish Meatballs Crockpot Recipe

Meatballs Ingredients:
- 1 pound Ground Beef
- 1 small Onion diced
- 1 tsp minced Garlic
- ¼ cup Almond Flour
- 1 tsp Salt
- ½ tsp Ground Black Pepper
- ¼ tsp Allspice
- 1 large Egg
- 2 Tbsp Olive Oil
Cream Sauce Ingredients:
- 1 Tbsp Salted Butter
- 1 Cup Beef Stock
- ½ Cup Heavy Cream
- 1 tsp Mustard Powder
- ½ tsp Salt
- ¼ tsp Ground Black Pepper
- ½ tsp Ground Nutmeg
- 1/4 tsp Xanthan Gum
- 1 Tbsp Parsley chopped
Place all the meatballs ingredients, except the oil, into a mixing bowl. Mix well.
Roll into balls that are about 2 tablespoons worth of mixture. Make sure they are even in size. We got 16 meatballs
Place a large frying pan over medium heat and add the oil.
Saute the meatballs, turning until browned on all sides and cooked through. Move to a plate.
Keep the pan on the heat, including all the little bits left by the meatballs in the pan.
Add the butter, beef stock, cream, mustard powder, salt, pepper, and nutmeg and xantham gum. Whisk together.
Simmer about 2 minutes
Add the meatballs to crockpot on low heat
Cover in the swedish meatball sauce
If around, turn the meatballs over half way through cooking time if they are not totally submerged in the sauce
Cook on low for 3 hours
