- 2 lb Ground beef
- 1/4 Cup Taco seasoning
- 300 Grams Bell peppers diced
- 70 Grams Onion diced
- 28 Ounce Can Rotel Mild Diced Tomatoes and Green Chiles
- 1 cup Cheddar cheese
Break up the burger into smaller pieces and add to crockpot.
Quickly drain diced tomatoes and add them to the crockpot.
Add all ingredients except cheddar and sour cream to the crockpot and mix together.
Cook on low for 8 hours, stirring a couple times if around but not necessary.
Right before serving, stir the crockpot.
For soup, dish directly from pot to bowl and top with cheddar cheese and sour cream.
For tacos, drain the mixture well, place on tortilla and top with items of your choice.
For tacos on cauliflower rice, spoon mixture from pot to top of the rice and top with items of your choice.
