Ingredients

  • 2 lb Ground beef
  • 1/4 Cup Taco seasoning
  • 300 Grams Bell peppers diced
  • 70 Grams Onion diced
  • 28 Ounce Can Rotel Mild Diced Tomatoes and Green Chiles
  • 1 cup Cheddar cheese

Instructions

  • Break up the burger into smaller pieces and add to crockpot.
  • Quickly drain diced tomatoes and add them to the crockpot.
  • Add all ingredients except cheddar and sour cream to the crockpot and mix together.
  • Cook on low for 8 hours, stirring a couple times if around but not necessary.
  • Right before serving, stir the crockpot.
  • For soup, dish directly from pot to bowl and top with cheddar cheese and sour cream.
  • For tacos, drain the mixture well, place on tortilla and top with items of your choice.
  • For tacos on cauliflower rice, spoon mixture from pot to top of the rice and top with items of your choice.
