Keto Cauliflower Casserole

- 1 Large Cauliflower broken into bite-size pieces
- 1 tsp Sea Salt
- 1/2 tsp Black Pepper
- 1 tsp Garlic minced
- 2 Tbsp Butter
- 8 Ounces Cream Cheese
- 225 Grams Sharp Cheddar Grated
- 100 Grams Sharp Cheddar Grated and reserved
- 20 Grams Cooked Bacon Crumbled
Preheat oven to 350°
Add half an inch of water to the pot
Bring water to a boil
Cut cauliflower into bite-size pieces
Add cauliflower to pot, cover with a lid
Once the water boils again, turn off the heat and let cauliflower set for 5 minutes
Drain cauliflower well and add to an 8x8 casserole dish or its equivalent
Microwave the butter and cream cheese in a medium sized bowl for 30 seconds, just to soften slightly
Add cheddar cheese, minced garlic, sea salt, and pepper to the bowl and mix
Add the mixture to the cauliflower and mix well
Top the dish with remaining cheddar, bacon, and chives
Bake for 30 minutes
Let stand for 5 minutes and serve
