Spinach and Feta Eggs
Ingredients
- 1 1/2 cups spinach
- 3 eggs
- 3/4 cup crumbledfeta
- 1 1/2 Tbsp butter
- salt optional
- black pepper optional
Instructions
- Preheat oven to 400°F
- Lightly grease 2 oven safe dishes with half the butter
- Heat a medium sized pan over medium heat and add the rest of the butter
- Cook spinach just until wilted
- Add spinach to the oven-safe dishes
- Crack an egg on top of each dish
- Season with salt and pepper
- Crumble the feta cheese over the top
- Bake for 18 minutes or until the eggs are set.
