This spinach and feta egg bake is our new favorite keto breakfast recipe! The presentation seems fancy while the food is quick to make! And it’s filling so it satisfies on all the levels that matter when trying to live a keto lifestyle.

Feel like having eggs for breakfast? How about our delicious spinach and feta egg dish that’s loaded with cheesy goodness? It’s simple to make, requires only a few ingredients, and it’s got a restaurant-quality appearance that’ll make you feel like you’re eating out at a fancy brunch place. Plus, it’s keto-friendly, so you can enjoy a rich, filling breakfast without overloading your body with unnecessary carbs. This recipe makes enough for two, but if you’re serving a big breakfast, you can double or even triple the recipe to make everybody in your family happy.

We start with a layer of freshly cooked spinach, then crack an egg directly over the spinach and season it with salt and pepper. Add the crumbled feta cheese, pop it in the oven, and you’re ready to go! When you dip your spoon in for the first time, prepare yourself for a gooey, savory mouthful of melted cheese, cooked egg and delicious spinach. It’s a hot, hearty breakfast that perks you up on a cold winter’s day, or gives you the energy you need to work in the summer heat. Ingredients

  • 1 1/2 cups spinach
  • 3 eggs
  • 3/4 cup crumbledfeta
  • 1 1/2 Tbsp butter
  • salt optional
  • black pepper optional

Instructions

  • Preheat oven to 400°F
  • Lightly grease 2 oven safe dishes with half the butter
  • Heat a medium sized pan over medium heat and add the rest of the butter
  • Cook spinach just until wilted
  • Add spinach to the oven-safe dishes
  • Crack an egg on top of each dish
  • Season with salt and pepper
  • Crumble the feta cheese over the top
  • Bake for 18 minutes or until the eggs are set.

Notes

When there are 2 of us we use 4 eggs and the same amount of the other ingredients. It makes 4 beautiful ramekin size dishes and we feel like we are really splurging.
